 A big, sexy fruit bomb based on Grenache and Syrah, the 2017 Côtes du Roussillon Villages I Have A Dream By Séverine Bourrier boasts a deep ruby/purple color as well as outstanding notes of black raspberries, toasted spices, graphite, and licorice. Brought up in a mix of stainless steel and barrels, it has medium to full body, ripe tannins, and rocking purity of fruit.  (11/2018)

 Unlike the Château de L'Ou wines, which are 100% Syrah, the Infiniment wines by Séverine Bourrier are Grenache-based. The 2017 I Have A Dream blends Grenache with Syrah and Carignan. The blend is barrel fermented and aged in the same new oak barrels for 12 months. Bold fruit notes of blueberries, cherries and raspberries mingle easily on the nose of this supple, full-bodied red. It's modern, plush and creamy, with attractive hints of Mexican chocolate on the finish. (JC)  (4/2018)

I love the name of this wine and I respect the work that this winery does. This is a delicious wine that delivers on its own merits. It has a wonderful velvety mouth feel and lush red and dark fruit flavors. It is balanced, and not a jammy fruit bomb, it is dry and fruity.

Séverine Bourrier at Château de l'Ou has created a great mid-range Côte de Rousillon that is big and juicy with fleshy fruit of blackberries and black cherries. For those who don't enjoy tannin this probably isn't for you as this wine packs a punch of mouth-coating luscious tannins that are sure to carry this wine to glory in later years. With summer up and coming this wine will definitely deserve a place on your BBQ table.

This is a phenomenal wine. Full bodied, and more modern in style, this wine is rich and luscious on the palate, yet keeps everything in balance. Without being overly fruity, the wine manages to coat your palate with black cherry, red plum and cocoa nibs. The tannin structure is fairly soft, which makes this wine approachable and easy to drink right now.
